Instructions
- 1. Preheat the oven to 350ยฐF (175ยฐC) and grease or line a baking pan.
- 2. Blend rolled oats into a fine oat flour if not already ground.
- 3. In a bowl, whisk eggs, applesauce, milk, and vanilla extract.
- 4. Stir in grated carrots until well combined.
- 5. Add oat flour, almond flour, baking powder, cinnamon, nutmeg, and salt.
- 6. Mix until a thick batter forms.
- 7. Fold in nuts or raisins if using.
- 8. Pour batter into the prepared pan and smooth the top.
- 9. Bake until a toothpick inserted in the center comes out clean.
- 10. Cool completely before slicing and serving.
