Description
A hearty and comforting casserole that layers creamy mac and cheese over a savory meatloaf base—two family favorites baked together for the ultimate one-pan dinner.
Ingredients
For the meatloaf layer:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1/4 cup finely chopped onion
1 tbsp Worcestershire sauce
1 tsp garlic powder
Salt and pepper to taste
For the mac and cheese layer:
8 oz elbow macaroni
2 tbsp butter
2 tbsp all-purpose flour
1 1/2 cups milk
2 cups shredded cheddar cheese
Salt and pepper to taste
Optional: extra cheese for topping
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
2. In a bowl, combine all meatloaf ingredients. Mix until just combined, then press evenly into the bottom of the baking dish.
3. Bake meatloaf base for 20 minutes while you prepare the macaroni and cheese.
4. Cook macaroni according to package instructions; drain and set aside.
5. In a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
6. Slowly whisk in milk, cooking until thickened, about 3–4 minutes.
7. Stir in shredded cheese until melted. Season with salt and pepper.
8. Add cooked macaroni and stir to coat.
9. Remove meatloaf from oven and spread mac and cheese evenly over the top.
10. Sprinkle with extra cheese if desired and bake another 15–20 minutes until bubbly.
11. Let rest for 5 minutes before serving.
Notes
You can add ketchup or BBQ sauce on top of the meatloaf layer before adding mac and cheese for extra flavor.
Use a blend of cheeses for a creamier, more flavorful topping.
This casserole reheats well and makes great leftovers.
