Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with liners.
  • 2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • 3. In another bowl, mix applesauce, honey, egg, almond milk, and vanilla.
  • 4. Add wet ingredients to dry ingredients and stir until just combined.
  • 5. Fold in diced apple gently.
  • 6. Divide batter evenly among muffin cups.
  • 7. Bake for 18 to 22 minutes until a toothpick inserted comes out clean.
  • 8. Let muffins cool slightly before serving.
