- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon yellow or Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon paprika (plus more for garnish)
- Optional: chopped chives or parsley
Instructions
- 1. Place the eggs in a saucepan and cover with water
- 2. Bring to a boil, then reduce heat and simmer for 10 minutes
- 3. Transfer eggs to an ice bath and let cool completely
- 4. Peel the eggs and slice them in half lengthwise
- 5. Remove the yolks and place them in a bowl
- 6. Mash yolks with mayonnaise, mustard, salt, pepper, and paprika until smooth
- 7. Spoon or pipe the yolk mixture back into the egg whites
- 8. Garnish with additional paprika and optional herbs
- 9. Chill until ready to serve
Notes
- Use full-fat mayonnaise for best keto macros
- Deviled eggs can be made up to one day ahead
- Add a pinch of cayenne or a splash of pickle juice for extra flavor
