These Keto Crispy Reuben Roll-Ups offer all the beloved flavors of a traditional Reuben sandwich โ savory corned beef, tangy sauerkraut, and creamy Swiss cheese โ without the bread. They are simple, satisfying, low-carb, and keto-friendly, making them perfect for a busy weeknight.
Ingredients
8 oz Sliced Deli Corned Beef
8 slices Sliced Swiss Cheese
1/2 cup Sauerkraut
2 tbsp Sugar-free Thousand Island Dressing
2 oz Softened Cream Cheese
1 tbsp Everything Bagel Seasoning
1 tbsp Olive Oil or Avocado Oil
Instructions
- Prepare the Filling: In a small bowl, combine the softened cream cheese and sugar-free Thousand Island dressing. Mix well until smooth
- Drain Sauerkraut: Thoroughly drain the sauerkraut. Squeeze out as much liquid as possible
- Assemble the Roll-Ups: Lay out a slice of corned beef. Top it with a slice of Swiss cheese. Spread about 1 teaspoon of the cream cheese mixture over the cheese. Place a small spoonful of drained sauerkraut at one end
- Roll Them Up: Tightly roll the corned beef, cheese, and sauerkraut mixture. Ensure itโs snug to keep its shape. Repeat with the remaining ingredients
- Season (Optional): If using, sprinkle the outside of each roll-up with Everything Bagel Seasoning
- Cook: Heat olive oil in a large non-stick skillet over medium heat. Place the Reuben roll-ups seam-side down in the hot pa
- Crisp and Brown: Cook for 2-3 minutes per side, turning gently, until golden brown and crispy. The cheese inside will melt beautifully
- Serve: Remove from skillet and serve immediately
Notes
Always drain your sauerkraut very well; excess moisture prevents crispiness.
Use thinly sliced deli corned beef to make rolling easier and create a more tender roll-up.
Do not overfill your Reuben roll-ups, as this makes them difficult to roll and can cause them to fall apart while cooking.
Cook your Keto Crispy Reuben Roll-Ups over medium heat; too high, and they burn; too low, and they won’t get crispy. A non-stick pan is highly recommended.
