Ingredients
1.5 lbs Ground Chicken (93% lean)
1/2 cup Breadcrumbs (Panko or regular)
1/2 cup Grated Parmesan Cheese
1 large Egg
1/4 cup Milk
4 cloves Minced Garlic
1/2 small Finely Diced Onio
2 tbsp Chopped Fresh Parsley
1 tsp Salt
1/2 tsp Black Pepper
1/4 cup Ketchup (for glaze)
1 tbsp Brown Sugar (for glaze)
1 tsp Worcestershire Sauce (for glaze)
Instructions
- Preheat your oven to 375ยฐF (190ยฐC)
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated parmesan cheese, egg, milk, minced garlic, diced onion, fresh parsley, salt, and black pepper. Mix everything gently with your hands until just combined, being careful not to overmix
- Shape the mixture into a loaf on a parchment-lined baking sheet
- In a small bowl, whisk together the ketchup, brown sugar, and Worcestershire sauce for the glaze
- Spread this glaze evenly over the top of the chicken meatloaf
- Bake for 55-65 minutes, or until the internal temperature reaches 165ยฐF (74ยฐC) using a meat thermometer
- Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute
Notes
Do not overmix the meatloaf mixture; gentle handling prevents a tough texture.
Use a meat thermometer to ensure your chicken meatloaf reaches an internal temperature of 165ยฐF (74ยฐC) for food safety and optimal juiciness.
Letting the meatloaf rest for 10-15 minutes after baking results in a moister slice.
Line your baking sheet with parchment paper for easy cleanup.
To make gluten-free, use gluten-free breadcrumbs or crushed pork rinds.
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 3 months.
Reheat slices gently in the microwave, skillet, or oven, adding a splash of broth if needed to maintain moisture.
Serve with classic mashed potatoes, steamed green beans, roasted asparagus, a garden salad, fluffy rice, roasted sweet potatoes, or creamy polenta.
