Description

A flavorful homemade version of the Jimmy Johnโ€™s Thai Chicken Wrap, packed with sweet heat, crisp veggies, and creamy peanut sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup shredded carrots
  • 1/2 cup shredded lettuce
  • 1/4 cup sliced cucumbers
  • 2 tbsp chopped cilantro
  • 4 large tortillas or wraps
  • 1/4 cup crushed peanuts (optional)

  • Peanut Thai Sauce:
  • 3 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sriracha
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 2โ€“3 tbsp warm water to thin

Instructions

  • 1. In a bowl, whisk together peanut sauce ingredients, thinning with warm water until smooth and drizzleable.
  • 2. In a separate bowl, combine shredded chicken with 2โ€“3 tablespoons of the sauce and toss to coat.
  • 3. Lay out each tortilla and layer with lettuce, shredded carrots, cucumbers, and coated chicken.
  • 4. Drizzle with additional peanut sauce and sprinkle with cilantro and crushed peanuts.
  • 5. Roll the wrap tightly, slice in half, and serve.

Notes

  • For extra crunch, add sliced red bell pepper.
  • You can prep the sauce ahead and chill it for up to 5 days.
