Description
A flavorful homemade version of the Jimmy Johnโs Thai Chicken Wrap, packed with sweet heat, crisp veggies, and creamy peanut sauce.
Ingredients

- 2 cups cooked shredded chicken
- 1/2 cup shredded carrots
- 1/2 cup shredded lettuce
- 1/4 cup sliced cucumbers
- 2 tbsp chopped cilantro
- 4 large tortillas or wraps
- 1/4 cup crushed peanuts (optional)

- Peanut Thai Sauce:
- 3 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sriracha
- 1 clove garlic, minced
- 1 tsp grated ginger
- 2โ3 tbsp warm water to thin
Instructions
- 1. In a bowl, whisk together peanut sauce ingredients, thinning with warm water until smooth and drizzleable.
- 2. In a separate bowl, combine shredded chicken with 2โ3 tablespoons of the sauce and toss to coat.
- 3. Lay out each tortilla and layer with lettuce, shredded carrots, cucumbers, and coated chicken.
- 4. Drizzle with additional peanut sauce and sprinkle with cilantro and crushed peanuts.
- 5. Roll the wrap tightly, slice in half, and serve.
Notes
- For extra crunch, add sliced red bell pepper.
- You can prep the sauce ahead and chill it for up to 5 days.
