- 4 cups potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 cup baby spinach or kale
- Fresh Parmesan cheese for serving
Instructions
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add Italian sausage and cook until browned, breaking it up as it cooks.
- 3. Add onion and sautรฉ until softened, then stir in garlic until fragrant.
- 4. Add diced potatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes if using.
- 5. Bring to a boil, then reduce heat and simmer for 18โ22 minutes until potatoes are tender.
- 6. Stir in heavy cream and spinach or kale.
- 7. Simmer for 5 more minutes until greens are wilted.
- 8. Taste and adjust seasoning.
- 9. Serve hot topped with freshly grated Parmesan cheese.
