- 8 oz wide egg noodles or pappardelle
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 (15 oz) can diced tomatoes, undrained
- 1/4 cup red wine or beef broth
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh basil or parsley, chopped (for garnish)
- Grated Parmesan, for serving
Instructions
- 1. Cook noodles according to package instructions. Drain and set aside.
- 2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
- 3. Add onion and bell pepper. Cook 4–5 minutes until softened.
- 4. Stir in garlic and red pepper flakes and cook for 1 minute.
- 5. Add diced tomatoes, red wine (or broth), and Italian seasoning. Stir to combine.
- 6. Simmer for 8–10 minutes until sauce thickens slightly. Season with salt and pepper.
- 7. Add cooked noodles to the skillet and toss to coat evenly.
- 8. Garnish with fresh herbs and Parmesan before serving.

- Use ground turkey or plant-based meat for a lighter version.
- Skip the wine and use broth for an alcohol-free option.
- Add spinach or mushrooms for extra vegetables.
