- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 cup low-sodium chicken broth
- 1 cup chopped carrots
- 1 cup chopped zucchini
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- 1. Set the Instant Pot to Sautรฉ mode. Add olive oil, then sautรฉ the onion and garlic for 2-3 minutes until softened.
- 2. Add the chicken breasts and sear lightly on both sides, about 2 minutes per side.
- 3. Add diced tomatoes, chicken broth, carrots, zucchini, oregano, paprika, salt, and pepper.
- 4. Cancel Sautรฉ mode. Seal the lid and set to Pressure Cook (Manual) on High for 10 minutes.
- 5. Once cooking is complete, allow a natural release for 5 minutes, then do a quick release.
- 6. Remove the chicken, shred or slice, then return it to the pot and stir.
- 7. Garnish with fresh parsley and serve hot.
Notes
- This dish is great for meal prep store leftovers in airtight containers for up to 4 days.
- You can substitute vegetables based on seasonality, such as bell peppers or green beans.
- For extra flavor, add a splash of lemon juice or a pinch of red chili flakes before serving.
