Description
A healthy and simple Instant Pot chicken recipe featuring lean protein, fresh vegetables, and warm spices. Perfect for busy weeknights or meal prep.
Ingredients
1 lb boneless, skinless chicken breasts
1 tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1 cup diced tomatoes (canned or fresh)
1 cup low-sodium chicken broth
1 cup chopped carrots
1 cup chopped zucchini
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Set the Instant Pot to Sautรฉ mode. Add olive oil, then sautรฉ the onion and garlic for 2-3 minutes until softened.
2. Add the chicken breasts and sear lightly on both sides, about 2 minutes per side.
3. Add diced tomatoes, chicken broth, carrots, zucchini, oregano, paprika, salt, and pepper.
4. Cancel Sautรฉ mode. Seal the lid and set to Pressure Cook (Manual) on High for 10 minutes.
5. Once cooking is complete, allow a natural release for 5 minutes, then do a quick release.
6. Remove the chicken, shred or slice, then return it to the pot and stir.
7. Garnish with fresh parsley and serve hot.
Notes
This dish is great for meal prepโstore leftovers in airtight containers for up to 4 days.
You can substitute vegetables based on seasonality, such as bell peppers or green beans.
For extra flavor, add a splash of lemon juice or a pinch of red chili flakes before serving.
Pair with brown rice or quinoa for a complete, balanced meal.
