Ingredients

3 tablespoons Unflavored Gelatin Powder
2–3 tablespoons Honey or Maple Syrup (to taste)
1 teaspoon Lemon Juice
Instructions
- Combine frozen fruit and ยฝ cup of water in a blender. Blend until completely smooth
- For super smooth Homemade Healthy Gushers Candy, press the fruit puree through a fine-mesh sieve into a saucepan to remove seeds
- In a small bowl, combine the remaining ยผ cup of water with the unflavored gelatin powder. Stir well and let it sit for 5 minutes until it "blooms" and thickens
- Place the fruit puree saucepan over medium-low heat. Bring it to a gentle simmer, but do not boil
- Remove the puree from heat. Stir in the bloomed gelatin, honey/maple syrup, and lemon juice. Whisk vigorously until the gelatin completely dissolves and the mixture is smooth
- Carefully pour the mixture into silicone molds (mini muffin molds or candy molds work great!)
- Refrigerate your Homemade Healthy Gushers Candy for at least 2-3 hours, or until completely firm
- Gently pop the healthy Gushers out of the molds. Enjoy your homemade healthy Gushers candy!
Notes
Use good quality gelatin for the best texture.
Always bloom your gelatin thoroughly; this prevents gritty candy.
Don't let the fruit puree boil, or you risk breaking down the gelatin's setting power.
Silicone molds make unmolding your healthy Gushers a breeze.
For extra shine, brush your molds with a tiny bit of coconut oil before pouring.
Store your delicious Homemade Healthy Gushers Candy in an airtight container in the refrigerator for up to 7-10 days.
Avoid leaving them at room temperature for extended periods, as they will soften.
Freezing is also an option! Arrange the healthy Gushers in a single layer on a parchment-lined baking sheet, freeze until solid, then transfer to a freezer-safe bag. They can last up to 2 months in the freezer.
Thaw them in the refrigerator when you crave some Homemade Healthy Gushers Candy.
No reheating needed for these wonderful treats!
For a vegan version, substitute the unflavored gelatin powder with agar-agar powder; follow package directions for the correct quantity. Honey can be swapped for maple syrup or agave nectar.
Instead of berries, try mango, peaches, or even a mix of fruits for different flavor profiles.
Adjust the sweetener amount based on your fruit's sweetness.
Add a tiny pinch of turmeric or beet powder for extra vibrant, natural coloring.
Incorporate a drop of vanilla extract for a subtle flavor twist.
