Ingredients
1.5 cups graham cracker crumbs

2 large eggs
0.25 cup fresh lemon juice
1 tbsp lemon zest
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line an 8×8 inch baking pan with parchment paper, leaving an overhang
- Combine graham cracker crumbs, sugar, and melted butter for the crust. Press firmly into the prepared pan. Bake 10 minutes
- Beat softened cream cheese and sugar in a large bowl until smooth
- Gradually beat in eggs, lemon juice, and lemon zest. Mix until just combined
- Pour the lemon cheesecake filling over the hot crust
- Bake for 30-35 minutes, until the center is just set but still slightly wobbly
- Cool completely on a wire rack, then chill the Heavenly Lemon Cheesecake Bars in the refrigerator for at least 3 hours before slicing
