Ingredients

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh or frozen blueberries
  • Optional: extra blueberries for topping

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a muffin pan with liners.
  • 2. In a bowl, whisk together Greek yogurt, eggs, honey, coconut oil, and vanilla.
  • 3. In another bowl, mix oat flour, protein powder, baking powder, baking soda, and salt.
  • 4. Pour the dry ingredients into the wet and stir until just combined.
  • 5. Fold in the blueberries gently.
  • 6. Divide batter evenly among muffin cups and top with a few extra berries if desired.
  • 7. Bake for 18โ€“22 minutes, or until a toothpick inserted comes out clean.
  • 8. Cool in the pan for 5 minutes, then transfer to a rack to finish cooling.

Notes

  • If using frozen blueberries, add them straight from the freezer to prevent bleeding.
  • These muffins store well in the fridge for up to 5 days or freeze beautifully for up to 2 months.
