Ingredients

- 1 cup plain Greek yogurt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 2 tsp vanilla extract
- 1 1/2 cups oat flour
- 1/2 cup vanilla protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh or frozen blueberries
- Optional: extra blueberries for topping
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a muffin pan with liners.
- 2. In a bowl, whisk together Greek yogurt, eggs, honey, coconut oil, and vanilla.
- 3. In another bowl, mix oat flour, protein powder, baking powder, baking soda, and salt.
- 4. Pour the dry ingredients into the wet and stir until just combined.
- 5. Fold in the blueberries gently.
- 6. Divide batter evenly among muffin cups and top with a few extra berries if desired.
- 7. Bake for 18โ22 minutes, or until a toothpick inserted comes out clean.
- 8. Cool in the pan for 5 minutes, then transfer to a rack to finish cooling.
Notes
- If using frozen blueberries, add them straight from the freezer to prevent bleeding.
- These muffins store well in the fridge for up to 5 days or freeze beautifully for up to 2 months.
