- 1 lb boneless skinless chicken breast, cubed
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and black pepper to taste
- 2 cups baby spinach or mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- Fresh parsley or cilantro for garnish
Instructions
- 1. Preheat oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment paper.
- 2. Toss diced sweet potatoes with half the olive oil, salt, and pepper. Roast for 20โ25 minutes until tender and lightly browned.
- 3. While sweet potatoes roast, season chicken with paprika, garlic powder, cumin, salt, and pepper.
- 4. Heat remaining olive oil in a skillet over medium-high heat and cook chicken for 5โ7 minutes until cooked through.
- 5. In a small bowl, mix Greek yogurt with lemon juice and a pinch of salt.
- 6. Assemble bowls with greens as the base, then add roasted sweet potatoes and chicken.
- 7. Drizzle with yogurt sauce, garnish with herbs, and serve warm.
Notes
- Add avocado or a sprinkle of feta for extra healthy fats.
