Description

Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1 cup milk or unsweetened almond milk
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots
  • 1/4 cup chopped walnuts or raisins (optional)

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with liners.
  • 2. Add rolled oats to a blender and blend into oat flour.
  • 3. Transfer oat flour to a bowl and whisk in baking powder, cinnamon, nutmeg, ginger, and salt.
  • 4. In another bowl, whisk milk, maple syrup, egg, coconut oil, and vanilla.
  • 5. Add wet ingredients to dry ingredients and mix until combined.
  • 6. Fold in grated carrots and optional add-ins.
  • 7. Divide batter evenly among muffin cups.
  • 8. Bake for 18 to 22 minutes until set and lightly golden.
  • 9. Cool slightly before serving.

Notes

  1. Use quick oats if you prefer not to blend your own oat flour.
  2. These muffins are lightly sweet; add more maple syrup if desired.
  3. Store in the refrigerator for up to 5 days or freeze for longer storage.
