- 1/2 cup egg whites (optional for extra protein)

- 1/4 tsp ground turmeric
- 1/8 tsp ground ginger
- 1/8 tsp black pepper
- 1/4 cup baby spinach, chopped
- 2 tbsp diced zucchini or bell pepper
- Salt to taste

Instructions
- 1. Heat oil in a nonstick skillet over low to medium heat.
- 2. Whisk eggs and egg whites with turmeric, ginger, black pepper, and a pinch of salt.
- 3. Pour egg mixture into the skillet and cook gently, stirring frequently.
- 4. When eggs begin to set, add spinach and vegetables.
- 5. Continue cooking until softly scrambled and just cooked through.
- 6. Remove from heat and serve warm with fresh herbs or avocado if desired.
Notes
