- 1 pound ground beef (85/15 or leaner)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen corn (optional)
- 1 cup cooked rice or pasta
- 1/2 cup shredded cheddar cheese (optional)
- Fresh cilantro or green onions, for garnish
Instructions
- 1. Heat olive oil in a large skillet over medium heat.
- 2. Add chopped onion and sauté for 3–4 minutes until softened.
- 3. Stir in garlic and cook for 1 minute.
- 4. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
- 5. Drain excess fat if needed, then season with chili powder, cumin, salt, and pepper.
- 6. Stir in diced tomatoes and corn (if using), and cook for 2–3 more minutes until heated through.
- 7. Mix in cooked rice or pasta and top with cheese if desired.
- 8. Garnish with fresh cilantro or green onions and serve warm.
Notes
- This recipe is endlessly adaptable; use bell peppers, black beans, or cooked quinoa in place of rice.
- Leftovers make a great filling for tacos, wraps, or stuffed peppers.
- To make it spicy, add chopped jalapeño or hot sauce to taste.
