Description

Grilled Chicken Margherita is a fresh and flavorful dish featuring juicy grilled chicken breasts topped with melted mozzarella, ripe tomatoes, and a drizzle of basil pesto.


Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

4 slices fresh mozzarella cheese

2 ripe Roma tomatoes, sliced

1/4 cup basil pesto

Fresh basil leaves, for garnish

Optional: balsamic glaze for drizzling


Instructions

1. Preheat grill to medium-high heat.

2. Rub chicken breasts with olive oil, then season with salt, pepper, and Italian seasoning.

3. Grill chicken for 6–8 minutes per side, or until fully cooked (internal temperature of 165°F/74°C).

4. During the last 2 minutes of grilling, top each chicken breast with a slice of mozzarella cheese. Close lid to melt.

5. Remove chicken from grill and top each piece with tomato slices and a spoonful of pesto.

6. Garnish with fresh basil and a drizzle of balsamic glaze if desired.

7. Serve hot with a side salad or roasted vegetables.

Notes

For best results, pound chicken to even thickness before grilling.

Store leftovers in an airtight container for up to 3 days and reheat gently.
