- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 4 slices fresh mozzarella cheese
- 2 ripe Roma tomatoes, sliced
- 1/4 cup basil pesto
- Fresh basil leaves, for garnish
- Optional: balsamic glaze for drizzling
Instructions
- 1. Preheat grill to medium-high heat.
- 2. Rub chicken breasts with olive oil, then season with salt, pepper, and Italian seasoning.
- 3. Grill chicken for 6โ8 minutes per side, or until fully cooked (internal temperature of 165ยฐF/74ยฐC).
- 4. During the last 2 minutes of grilling, top each chicken breast with a slice of mozzarella cheese. Close lid to melt.
- 5. Remove chicken from grill and top each piece with tomato slices and a spoonful of pesto.
- 6. Garnish with fresh basil and a drizzle of balsamic glaze if desired.
- 7. Serve hot with a side salad or roasted vegetables.
Notes
- For best results, pound chicken to even thickness before grilling.
- Store leftovers in an airtight container for up to 3 days and reheat gently.
- Great served over zucchini noodles, quinoa, or pasta for a complete meal.
