1 cup water

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×9-inch baking dish.

2. In a bowl, whisk together eggs and sugar until light and fluffy.

3. Add yogurt, oil, orange zest, lemon zest, and mix well.

4. Stir in semolina, all-purpose flour, baking powder, and salt until just combined.

5. Pour batter into prepared pan and smooth the top.

6. Bake for 30–35 minutes or until golden and a toothpick comes out clean.

7. Meanwhile, prepare the syrup: In a saucepan, combine sugar, water, honey, and lemon juice. Bring to a boil, then simmer for 8–10 minutes. Stir in orange blossom water or vanilla, then remove from heat.

8. Once cake is done, let it cool for 10 minutes, then slowly pour warm syrup over it, letting it soak in.

9. Cool completely before cutting into squares or diamonds to serve.

Notes

Revani is traditionally served at room temperature and often garnished with shredded coconut or chopped pistachios.

Letting the cake rest overnight improves flavor and syrup absorption.
