Description

Soft and warmly spiced gingerbread cookies made without molasses, using honey for sweetness and classic gingerbread flavor.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • 1. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves
  • 2. In a large bowl, beat the butter and brown sugar until light and fluffy
  • 3. Add the honey, egg, and vanilla extract and mix until well combined
  • 4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
  • 5. Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour
  • 6. Preheat the oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper
  • 7. Roll out the chilled dough on a lightly floured surface and cut into desired shapes
  • 8. Place cookies on prepared baking sheets and bake for 8โ€“10 minutes until edges are set
  • 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely

Notes

  • Honey replaces molasses while keeping the cookies soft and flavorful
  • Do not overbake for softer cookies
  • Cookies can be decorated with icing once completely cooled
