Description
Soft and warmly spiced gingerbread cookies made without molasses, using honey for sweetness and classic gingerbread flavor.
Ingredients

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- 1. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves
- 2. In a large bowl, beat the butter and brown sugar until light and fluffy
- 3. Add the honey, egg, and vanilla extract and mix until well combined
- 4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
- 5. Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour
- 6. Preheat the oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper
- 7. Roll out the chilled dough on a lightly floured surface and cut into desired shapes
- 8. Place cookies on prepared baking sheets and bake for 8โ10 minutes until edges are set
- 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
Notes
- Honey replaces molasses while keeping the cookies soft and flavorful
- Do not overbake for softer cookies
- Cookies can be decorated with icing once completely cooled
