Description

A rich and creamy Italian-style frozen dessert with a smooth, dense texture and intense flavor.


Ingredients

Scale

2 cups whole milk

1 cup heavy cream

3/4 cup granulated sugar

4 large egg yolks

1 tsp vanilla extract (or other flavoring)

Pinch of salt


Instructions

1. In a saucepan, heat the milk and cream over medium heat until just simmering.

2. In a bowl, whisk together the egg yolks and sugar until pale and thick.

3. Slowly pour the warm milk mixture into the yolks, whisking constantly.

4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.

5. Remove from heat and stir in vanilla extract and a pinch of salt.

6. Strain the custard into a clean bowl and chill in the refrigerator for at least 4 hours or overnight.

7. Pour into an ice cream maker and churn according to the manufacturer’s instructions.

8. Transfer to a container and freeze for 2–4 hours until firm.

Notes

For chocolate gelato, mix in 1/2 cup melted dark chocolate before chilling.

For fruit flavors, add puréed fruit during the churning stage.
