A rich and creamy Italian-style frozen dessert with a smooth, dense texture and intense flavor.
Ingredients

- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 tsp vanilla extract (or other flavoring)
- Pinch of salt
Instructions
- 1. In a saucepan, heat the milk and cream over medium heat until just simmering.
- 2. In a bowl, whisk together the egg yolks and sugar until pale and thick.
- 3. Slowly pour the warm milk mixture into the yolks, whisking constantly.
- 4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.
- 5. Remove from heat and stir in vanilla extract and a pinch of salt.
- 6. Strain the custard into a clean bowl and chill in the refrigerator for at least 4 hours or overnight.
- 7. Pour into an ice cream maker and churn according to the manufacturerโs instructions.
- 8. Transfer to a container and freeze for 2โ4 hours until firm.
Notes
- For chocolate gelato, mix in 1/2 cup melted dark chocolate before chilling.
- For fruit flavors, add purรฉed fruit during the churning stage.
