Description

Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 tsp vanilla extract (or other flavoring)
  • Pinch of salt

Instructions

  • 1. In a saucepan, heat the milk and cream over medium heat until just simmering.
  • 2. In a bowl, whisk together the egg yolks and sugar until pale and thick.
  • 3. Slowly pour the warm milk mixture into the yolks, whisking constantly.
  • 4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.
  • 5. Remove from heat and stir in vanilla extract and a pinch of salt.
  • 6. Strain the custard into a clean bowl and chill in the refrigerator for at least 4 hours or overnight.
  • 7. Pour into an ice cream maker and churn according to the manufacturerโ€™s instructions.
  • 8. Transfer to a container and freeze for 2โ€“4 hours until firm.

Notes

  • For chocolate gelato, mix in 1/2 cup melted dark chocolate before chilling.
  • For fruit flavors, add purรฉed fruit during the churning stage.
