A decadent, dessert-inspired edible treat combining flavors of creamy vanilla, sweet berries, and rich chocolate to mimic the indulgent profile of the Gelato Cake strain—perfect for relaxing evenings or special occasions.
Ingredients
1/2 cup unsalted butter, melted
1/4 cup infused coconut oil or cannabutter (dose as desired)
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp almond extract
1/2 cup whole milk
1 1/4 cups all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 cup mini chocolate chips
1/3 cup freeze-dried berries (strawberries or blueberries), crushed
Optional: whipped cream or berry glaze for serving
Instructions
1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
2. In a large bowl, whisk together melted butter, infused oil, and sugar until smooth.
3. Add eggs, vanilla, and almond extract. Whisk in milk.
4. In another bowl, sift together flour, cocoa powder, baking powder, and salt.
5. Gradually stir dry ingredients into wet until just combined.
6. Fold in chocolate chips and crushed freeze-dried berries.
7. Pour batter into prepared pan and smooth the top.
8. Bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
9. Cool in pan for 10 minutes, then transfer to a rack to cool completely.
10. Top with whipped cream or berry glaze before serving, if desired.
Notes
Adjust infused oil or cannabutter amount based on potency and preference.
Store leftovers tightly covered at room temperature up to 2 days, or refrigerated for 5 days.
