Description
Galena Chicken Recipe is a flavorful, juicy grilled or baked chicken dish named after the historic town of Galena, Illinois. It features a savory-sweet marinade with soy sauce, herbs, and a touch of mustard.
Ingredients
4 boneless, skinless chicken breasts
1/2 cup soy sauce
1/2 cup vegetable oil
1/4 cup red wine vinegar
1/4 cup honey
2 tbsp Dijon mustard
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
1/2 tsp black pepper
Instructions
1. In a medium bowl, whisk together soy sauce, vegetable oil, vinegar, honey, mustard, basil, oregano, garlic powder, and black pepper.
2. Place chicken breasts in a large zip-top bag or shallow dish. Pour marinade over the chicken.
3. Seal and refrigerate for at least 4 hours, preferably overnight.
4. Preheat grill to medium heat or oven to 375°F (190°C).
5. Remove chicken from marinade and discard excess liquid.
6. Grill chicken for 6–7 minutes per side, or bake for 25–30 minutes, until internal temperature reaches 165°F (74°C).
7. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
Great for meal prep—leftovers are delicious in salads or wraps.
You can substitute thighs or drumsticks; adjust cook time as needed.
For extra flavor, reserve a few tablespoons of marinade (before touching raw chicken) to brush over the chicken while cooking.
