Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup (canned or homemade)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Gruyère or Swiss cheese
  • Fresh parsley for garnish

Instructions

  • 1. Preheat oven to 375°F (190°C).
  • 2. Heat olive oil in a large skillet over medium heat and add sliced onions. Cook for 12–15 minutes, stirring often, until deeply caramelized.
  • 3. Add garlic and cook for 1 minute until fragrant.
  • 4. Pour in beef broth, French onion soup, Worcestershire sauce, thyme, salt, and pepper. Simmer for 3–4 minutes.
  • 5. Season chicken breasts with salt and pepper and place them in a baking dish.
  • 6. Pour the onion mixture over the chicken.
  • 7. Cover with foil and bake for 25 minutes.
  • 8. Remove foil, top chicken with shredded Gruyère, and bake uncovered for another 10–12 minutes until cheese is melted and bubbly.
  • 9. Garnish with fresh parsley before serving.

Notes

  • Serve over mashed potatoes, rice, or buttered noodles to soak up the rich onion sauce.
  • For extra caramelization, let the onions cook low and slow for a few extra minutes.
