- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup French onion soup (canned or homemade)
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded Gruyère or Swiss cheese
- Fresh parsley for garnish
Instructions
- 1. Preheat oven to 375°F (190°C).
- 2. Heat olive oil in a large skillet over medium heat and add sliced onions. Cook for 12–15 minutes, stirring often, until deeply caramelized.
- 3. Add garlic and cook for 1 minute until fragrant.
- 4. Pour in beef broth, French onion soup, Worcestershire sauce, thyme, salt, and pepper. Simmer for 3–4 minutes.
- 5. Season chicken breasts with salt and pepper and place them in a baking dish.
- 6. Pour the onion mixture over the chicken.
- 7. Cover with foil and bake for 25 minutes.
- 8. Remove foil, top chicken with shredded Gruyère, and bake uncovered for another 10–12 minutes until cheese is melted and bubbly.
- 9. Garnish with fresh parsley before serving.
Notes
- Serve over mashed potatoes, rice, or buttered noodles to soak up the rich onion sauce.
- For extra caramelization, let the onions cook low and slow for a few extra minutes.
