- 2 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 1/2 cups orzo
- 2 cups cooked shredded chicken
- 1 cup beef broth
- 2 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded Gruyรจre or Swiss cheese
- 1/2 cup shredded mozzarella
- Fresh parsley for garnish
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC).
- 2. Heat butter and olive oil in a large skillet over medium heat. Add onions and cook for 12โ15 minutes until deeply caramelized.
- 3. Stir in garlic and cook for 1 minute.
- 4. Add orzo and toast for 1โ2 minutes, stirring frequently.
- 5. Pour in beef broth, chicken broth, Worcestershire sauce, thyme, salt, and pepper. Stir well.
- 6. Fold in shredded chicken and bring to a gentle simmer for 2โ3 minutes.
- 7. Transfer mixture to a greased casserole dish.
- 8. Top with Gruyรจre and mozzarella.
- 9. Bake uncovered for 15โ20 minutes, or until bubbly and the cheese is golden.
- 10. Garnish with parsley and serve warm.
Notes
- For extra depth, splash in a bit of white wine when sautรฉing the onions.
- This casserole thickens as it cools add a splash of broth when reheating if needed.
