Description
This “forgotten” crockpot jambalaya is a hands-off, flavor-packed Southern dish with chicken, sausage, and shrimp simmered to perfection in a spicy Creole tomato base.
Ingredients
1 pound boneless, skinless chicken thighs, cut into chunks
1/2 pound smoked sausage, sliced
1 can (14.5 oz) diced tomatoes, undrained
1 cup chicken broth
1 green bell pepper, chopped
1 celery stalk, chopped
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon cayenne pepper (optional)
Salt and pepper to taste
1/2 pound raw shrimp, peeled and deveined
2 cups cooked rice
Optional: chopped green onions or parsley for garnish
Instructions
1. Add chicken, sausage, tomatoes, broth, bell pepper, celery, onion, garlic, and all seasonings to the slow cooker.
2. Stir to combine, cover, and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
3. About 30 minutes before serving, stir in shrimp and cooked rice.
4. Cover and continue cooking until shrimp are pink and cooked through.
5. Taste and adjust seasoning as needed.
6. Serve hot, garnished with green onions or parsley if desired.
Notes
This dish is called “forgotten” because you can set it and walk away until it’s ready.
Use andouille sausage for extra heat and flavor.
For a lower-carb option, skip the rice or use cauliflower rice added at the end.
