Description
This โforgottenโ crockpot jambalaya is a hands-off, flavor-packed Southern dish with chicken, sausage, and shrimp simmered to perfection in a spicy Creole tomato base.

- 1 pound boneless, skinless chicken thighs, cut into chunks
- 1/2 pound smoked sausage, sliced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
- 1 green bell pepper, chopped
- 1 celery stalk, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon thyme
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1/2 pound raw shrimp, peeled and deveined
- 2 cups cooked rice
- Optional: chopped green onions or parsley for garnish
Instructions
- 1. Add chicken, sausage, tomatoes, broth, bell pepper, celery, onion, garlic, and all seasonings to the slow cooker.
- 2. Stir to combine, cover, and cook on LOW for 6โ7 hours or HIGH for 3โ4 hours.
- 3. About 30 minutes before serving, stir in shrimp and cooked rice.
- 4. Cover and continue cooking until shrimp are pink and cooked through.
- 5. Taste and adjust seasoning as needed.
- 6. Serve hot, garnished with green onions or parsley if desired.
Notes
- This dish is called “forgotten” because you can set it and walk away until itโs ready.
- Use andouille sausage for extra heat and flavor.
- For a lower-carb option, skip the rice or use cauliflower rice added at the end.
