  • 3/4 cup dried cranberries
  • 1/4 cup coarse sparkling sugar (for rolling)

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  • 2. In a bowl, cream together butter and granulated sugar until light and fluffy.
  • 3. Mix in egg and vanilla extract until combined.
  • 4. In a separate bowl, whisk together flour, baking powder, and salt.
  • 5. Gradually add dry ingredients to wet ingredients and mix until a dough forms.
  • 6. Fold in dried cranberries.
  • 7. Roll dough into tablespoon-sized balls and roll each in sparkling sugar.
  • 8. Place cookies on baking sheet 2 inches apart.
  • 9. Bake for 11โ€“13 minutes until edges are set.
  • 10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • For extra sparkle, roll dough twice in sugar.
