- 3/4 cup dried cranberries
- 1/4 cup coarse sparkling sugar (for rolling)
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- 2. In a bowl, cream together butter and granulated sugar until light and fluffy.
- 3. Mix in egg and vanilla extract until combined.
- 4. In a separate bowl, whisk together flour, baking powder, and salt.
- 5. Gradually add dry ingredients to wet ingredients and mix until a dough forms.
- 6. Fold in dried cranberries.
- 7. Roll dough into tablespoon-sized balls and roll each in sparkling sugar.
- 8. Place cookies on baking sheet 2 inches apart.
- 9. Bake for 11โ13 minutes until edges are set.
- 10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For extra sparkle, roll dough twice in sugar.
