- 1 1/2 pounds boneless, skinless chicken breasts
- 3 cups baby potatoes, halved
- 2 cups baby carrots
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Optional: chopped parsley for garnish
Instructions
- 1. Place chicken breasts in the bottom of the slow cooker.
- 2. Add potatoes, carrots, onion, and garlic on top of the chicken.
- 3. Drizzle olive oil over the ingredients.
- 4. Sprinkle Italian seasoning, paprika, salt, and pepper evenly.
- 5. Pour chicken broth around the ingredients.
- 6. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
- 7. Check chicken for doneness and shred or slice if desired.
- 8. Taste and adjust seasoning before serving.
- 9. Garnish with parsley if using and serve warm.
Notes
- Swap chicken for pork chops or beef stew meat if desired.
- Add green beans or broccoli during the last hour for extra veggies.
- Leftovers keep well and are great for meal prep.
