Ingredients

- 4 cups frozen corn (or fresh if available)
- 3 large potatoes, peeled and diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 small onion, chopped
- 3 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp thyme
- 1 cup cooked ham or bacon, diced (optional)
- 1 1/2 cups milk
- 1 cup heavy cream
- 2 tbsp butter
Instructions
- 1. Add corn, potatoes, carrots, celery, onion, chicken broth, salt, pepper, paprika, thyme, and ham or bacon (if using) to the slow cooker.
- 2. Stir well, then cover and cook on LOW for 6โ7 hours or HIGH for 3โ4 hours, until vegetables are tender.
- 3. Stir in milk, heavy cream, and butter.
- 4. Cover and cook an additional 20โ30 minutes until creamy and warmed through.
- 5. Taste and adjust seasoning before serving.
Notes
- For thicker chowder, mash a few potatoes in the pot before adding dairy.
- Use half-and-half instead of cream for a lighter version.
- Leftovers reheat well but avoid boiling to keep the dairy from separating.
