Ingredients
Scale
- 1 1/2 cups all-purpose flour

- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp melted butter or oil
- 1 tsp vanilla extract
- Butter or oil for cooking

- 3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpyโdo not overmix.
- 4. Let the batter rest for 5 minutes to activate the baking powder.
- 5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
- 6. Pour 1/4 cup of batter per pancake onto the skillet.
- 7. Cook until bubbles form on the surface and the edges look set, about 2โ3 minutes.
- 8. Flip and cook the other side for 1โ2 minutes, until golden and cooked through.
- 9. Serve warm with your favorite toppings like maple syrup, fruit, or whipped cream.
Notes
- Do not overmix the batter to keep the pancakes light and fluffy.
- Resting the batter helps achieve a better rise and texture.
- You can make these pancakes dairy-free by using almond milk and oil.
- Leftover pancakes can be frozen and reheated in a toaster.
