Ingredients
1 1/2 cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 1/4 cups milk
1 large egg
3 tbsp melted butter or oil
1 tsp vanilla extract

Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy—do not overmix.
4. Let the batter rest for 5 minutes to activate the baking powder.
5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
6. Pour 1/4 cup of batter per pancake onto the skillet.
7. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
8. Flip and cook the other side for 1–2 minutes, until golden and cooked through.
9. Serve warm with your favorite toppings like maple syrup, fruit, or whipped cream.
Notes
Do not overmix the batter to keep the pancakes light and fluffy.
Resting the batter helps achieve a better rise and texture.
You can make these pancakes dairy-free by using almond milk and oil.
Leftover pancakes can be frozen and reheated in a toaster.
