Description
A simple and flavorful baked Easy Chicken and Pineapple Casserole, savory sauce, and tender chunks of chicken. Great for family dinners and easy meal prep.

- 2 cups cooked chicken, chopped or shredded
- 1 cup pineapple chunks (canned, drained)
- 1/2 cup pineapple juice (reserved from can)
- 1 cup cooked white rice
- 1 cup bell pepper, chopped
- 1/2 cup chopped onion
- 1/2 cup shredded cheddar cheese
- 1/4 cup soy sauce
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp cornstarch
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
- 2. In a large skillet, heat olive oil over medium heat. Sautรฉ onion and bell pepper until softened, about 5 minutes.
- 3. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic powder, and cornstarch.
- 4. In a large mixing bowl, combine cooked chicken, sautรฉed vegetables, pineapple chunks, rice, and sauce mixture. Stir until evenly coated.
- 5. Pour the mixture into the prepared baking dish and spread evenly.
- 6. Top with shredded cheddar cheese.
- 7. Bake for 20โ25 minutes, or until heated through and cheese is melted and bubbly.
- 8. Let sit for 5 minutes before serving.
Notes
- This casserole is great for using up leftover rotisserie chicken.
- You can substitute brown rice or quinoa for added fiber and nutrients.
- Add red pepper flakes or a splash of hot sauce if you prefer a spicy kick.
- Leftovers store well in the fridge for up to 3 days and reheat easily.
