Description

A quick and refreshing couscous salad loaded with grated carrot, fresh spinach, and a lemony olive oil dressing. Light, nutritious, and perfect for meal prep or a simple side dish.


Ingredients

1 cup couscous

1 cup boiling water or vegetable broth

1 tbsp olive oil

1/2 tsp salt

1 cup grated carrot

2 cups baby spinach, roughly chopped

1/4 cup chopped parsley (optional)

Juice of 1 lemon

2 tbsp olive oil (for dressing)

Salt and black pepper to taste


Instructions

1. In a heatproof bowl, combine couscous, 1 tbsp olive oil, and 1/2 tsp salt. Pour in boiling water or broth, cover, and let sit for 5 minutes.

2. Fluff couscous with a fork and let cool slightly.

3. Add grated carrot, chopped spinach, and parsley (if using) to the couscous.

4. In a small bowl, whisk together lemon juice, 2 tbsp olive oil, salt, and pepper.

5. Pour dressing over couscous mixture and toss to combine.

6. Serve chilled or at room temperature.

Notes

Add chickpeas or feta for extra protein.

Great as a light lunch, picnic salad, or side for grilled meats.
