Notes
This recipe is praised for its ease (set it and forget it), rich flavors, use of everyday ingredients, versatility, and suitability for meal prepping.
For variations, substitute chicken thighs for breasts, or cream of mushroom/celery soup for cream of chicken. Add drained corn or peas in the last hour, or red pepper flakes for a subtle kick. Mix in cooked pasta or rice for a complete one-pot meal.
Pro tips include avoiding lifting the lid during cooking to maintain temperature, using softened cream cheese for smooth blending,
Store cooled leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 2-3 months. Reheat gently in the microwave or on the stovetop over low heat, adding a splash of broth or water if the sauce appears too thick.
Serve with fluffy white rice, egg noodles, steamed green beans, roasted broccoli, a simple side salad, or warm crusty bread/garlic knots for dipping.
Do not use frozen chicken; thawed chicken is best for safety and results. This dish can be gluten-free if you check and use gluten-free specific cream of chicken soup and ranch seasoning packets. To thicken the sauce, mix a tablespoon of cornstarch with cold water and stir it in during the last 30 minutes of cooking.
