Description

Dorayaki (Red Bean Pancakes) are a popular Japanese confection featuring two small, round, honey-infused pancakes filled with sweet red bean paste. They are a simple, comforting, and easy-to-make treat, perfect for families looking for a delightful snack or dessert with minimal fuss.

Ingredients

Scale

2 Large eggs
1/2 cup Granulated sugar
1 tbsp Honey
1/4 cup Water
1 cup All-purpose flour
1 tsp Baking soda
1/4 tsp Salt
1 cup Anko (sweet red bean paste)
1 tbsp Vegetable oil (for greasing)

Instructions

  1. Whisk Wet Ingredients: In a large bowl, whisk together the eggs, sugar, honey, and water until well combined and frothy
  2. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, and salt
  3. Mix Batters: Gradually add the dry ingredients to the wet ingredients. Mix until just combined. Do not overmix; a few lumps are okay. This ensures fluffy Dorayaki (Red Bean Pancakes)
  4. Rest the Batter: Cover the bowl and let the Dorayaki batter rest at room temperature for 15-20 minutes. This allows the baking soda to activate
  5. Cook Pancakes: Heat a non-stick pan or griddle over medium-low heat. Lightly grease it with vegetable oil. Pour about 1/4 cup of batter per pancake. Cook for 2-3 minutes until bubbles appear on the surface and the edges set
  6. Flip and Cook: Flip the Dorayaki (Red Bean Pancakes) and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter
  7. Assemble: Once cool, spread about 2 tablespoons of anko on the flat side of one pancake. Top with another pancake, gently pressing them together to form your Dorayaki (Red Bean Pancakes) sandwiches

Notes

Use a non-stick pan for easy flipping.

Maintain consistent heat; low to medium-low heat prevents burning and ensures even cooking.

Do not overmix the batter; a slightly lumpy batter makes for tender Dorayaki.

A uniform scoop for each pancake ensures consistent sizing.

Let the batter rest; this step truly enhances the texture of your homemade Dorayaki.

Store leftover Dorayaki in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.

If refrigerated, allow the Dorayaki to come to room temperature before serving for the best texture.

You can also freeze individual Dorayaki wrapped in plastic wrap for up to 1 month. Thaw them at room temperature before enjoying.
