1 cup Cottage Cheese
2 large Eggs
2 tablespoons All-purpose Flour
1/2 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/2 teaspoon Dried Herbs
1/4 teaspoon Salt
Pinch Black Pepper
1 teaspoon Olive Oil
Instructions
- Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper. Lightly grease the parchment paper with olive oil
- In a medium bowl, combine the cottage cheese, eggs, flour, garlic powder, onion powder, dried herbs, salt, and pepper. Mix everything well until just combined
- Pour the mixture onto the prepared baking sheet. Using a spatula or the back of a spoon, spread the batter evenly into a thin rectangle or circle, about 1/4 to 1/2 inch thick
- Bake for 20-25 minutes, or until the flatbread is golden brown around the edges and set in the center
- Remove the flatbread from the oven. Let it cool on the baking sheet for a few minutes before slicing. Slice and serve warm
Notes
For the best texture and richer flavor, use full-fat cottage cheese.
If you prefer a smoother flatbread, briefly blend the cottage cheese in a food processor before mixing.
Do not spread the batter too thick; a thinner layer ensures a wonderfully crispy flatbread.
For extra crispiness, you can flip the flatbread halfway through baking or broil for 1-2 minutes at the end (watch closely).
Experiment with seasonings; fresh dill or chives are excellent additions to the batter.
Allow the flatbread to cool slightly before slicing to help it maintain its structure.
