1 teaspoon Olive Oil


Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper. Lightly grease the parchment paper with olive oil
  2. In a medium bowl, combine the cottage cheese, eggs, flour, garlic powder, onion powder, dried herbs, salt, and pepper. Mix everything well until just combined
  3. Pour the mixture onto the prepared baking sheet. Using a spatula or the back of a spoon, spread the batter evenly into a thin rectangle or circle, about 1/4 to 1/2 inch thick
  4. Bake for 20-25 minutes, or until the flatbread is golden brown around the edges and set in the center
  5. Remove the flatbread from the oven. Let it cool on the baking sheet for a few minutes before slicing. Slice and serve warm

Notes

For the best texture and richer flavor, use full-fat cottage cheese.

If you prefer a smoother flatbread, briefly blend the cottage cheese in a food processor before mixing.

Do not spread the batter too thick; a thinner layer ensures a wonderfully crispy flatbread.

For extra crispiness, you can flip the flatbread halfway through baking or broil for 1-2 minutes at the end (watch closely).

Experiment with seasonings; fresh dill or chives are excellent additions to the batter.

Allow the flatbread to cool slightly before slicing to help it maintain its structure.

Store leftover flatbread in an airtight container in the refrigerator for up to 3-4 days.
