Ingredients
1 cup Medjool dates, pitted
1/2 cup warm water or milk of choice
1 teaspoon vanilla extract
Pinch of sea salt
Instructions
1. Add pitted dates to a bowl and cover with warm water if they feel dry; soak for 5–10 minutes, then drain.
2. Place dates in a blender or food processor with 1/2 cup warm water (or milk), vanilla extract, and salt.
3. Blend until smooth and creamy, scraping down the sides as needed.
4. Adjust consistency with a splash more liquid if desired.
5. Transfer to a jar and store in the fridge for up to 1 week.
Notes
Use soft, fresh Medjool dates for best results.
Great as a dip for apples, spread on toast, stirred into oatmeal, or as a healthy dessert topping.
Add a spoonful of nut butter or cinnamon for extra flavor depth.
