Description
Czech goulash (ฤeskรฝ gulรกลก) is a hearty, paprika-rich beef stew traditionally served with dumplings or crusty bread. Itโs deeply flavorful, perfect for cold-weather comfort.
Ingredients
2 tablespoons lard or vegetable oil
2 large onions, finely chopped
2 pounds beef chuck, cut into 1-inch cubes
2 tablespoons sweet Hungarian paprika
1 teaspoon caraway seeds
3 cloves garlic, minced
2 tablespoons tomato paste
2 cups beef broth
Salt and pepper to taste
Optional: 1 teaspoon marjoram, 1 tablespoon flour for thickening
Instructions
1. Heat lard or oil in a large pot over medium heat. Add onions and cook until deep golden brown, about 15โ20 minutes.
2. Add beef and sear on all sides until browned.
3. Stir in garlic, paprika, caraway seeds, and tomato paste. Cook for 1 minute.
4. Pour in beef broth, scraping up any browned bits from the bottom of the pot.
5. Season with salt and pepper, add marjoram if using, and bring to a simmer.
6. Cover and cook on low heat for 1.5 to 2 hours, stirring occasionally, until beef is tender.
7. If desired, mix 1 tablespoon flour with a little cold water and stir into the goulash to thicken during the last 10 minutes.
8. Serve hot with Czech bread dumplings or rustic bread.
Notes
The key to flavor is deeply caramelizing the onionsโdonโt rush it!
Tastes even better the next day after flavors develop.
For a spicier version, add hot paprika or a pinch of chili flakes.
