Description
A savory omelette inspired by the classic Cuban sandwich, filled with ham, pork, pickles, mustard, and Swiss cheese for a bold and flavorful breakfast twist.
Ingredients
4 large eggs
2 tbsp milk or water
Salt and pepper to taste
1/4 cup shredded Swiss cheese
1/4 cup cooked shredded pork or carnitas
1/4 cup diced ham
2–3 pickle slices, chopped
1 tsp yellow or Dijon mustard
1 tbsp butter or oil
Optional: chopped parsley for garnish
Instructions
1. In a bowl, whisk together eggs, milk or water, salt, and pepper.
2. Heat butter in a non-stick skillet over medium heat.
3. Pour egg mixture into skillet and cook undisturbed for 1–2 minutes until edges begin to set.
4. Gently lift edges and tilt pan to let uncooked egg flow underneath.
5. Once mostly set, spread mustard on one half of the omelette.
6. Add ham, shredded pork, pickles, and Swiss cheese over mustard.
7. Fold the omelette in half and cook for 1–2 more minutes until cheese is melted and filling is hot.
8. Slide onto a plate and garnish with parsley if desired.
Notes
Use leftover Cuban roast pork or pulled pork for authentic flavor.
For extra tang, add a dash of pickle juice to the egg mixture.
Pairs perfectly with crispy home fries or a side salad.
