  • 1/4 cup cooked shredded pork or carnitas
  • 1/4 cup diced ham
  • 2โ€“3 pickle slices, chopped
  • 1 tsp yellow or Dijon mustard
  • 1 tbsp butter or oil
  • Optional: chopped parsley for garnish

Instructions

  • 1. In a bowl, whisk together eggs, milk or water, salt, and pepper.
  • 2. Heat butter in a non-stick skillet over medium heat.
  • 3. Pour egg mixture into skillet and cook undisturbed for 1โ€“2 minutes until edges begin to set.
  • 4. Gently lift edges and tilt pan to let uncooked egg flow underneath.
  • 5. Once mostly set, spread mustard on one half of the omelette.
  • 6. Add ham, shredded pork, pickles, and Swiss cheese over mustard.
  • 7. Fold the omelette in half and cook for 1โ€“2 more minutes until cheese is melted and filling is hot.
  • 8. Slide onto a plate and garnish with parsley if desired.

  • Use leftover Cuban roast pork or pulled pork for authentic flavor.
