This hearty crockpot soup is the perfect hands-off comfort food—loaded with vegetables, protein, and savory broth. Just set it and forget it for a warm, satisfying meal.
Ingredients
1 pound boneless, skinless chicken breasts or thighs
1 cup chopped carrots
1 cup chopped celery
1 small onion, diced
3 cloves garlic, minced
1 (15 oz) can diced tomatoes
1 (15 oz) can white beans, drained and rinsed
6 cups chicken or vegetable broth
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup uncooked pasta or rice (optional)
Fresh parsley for garnish
Instructions
1. Add chicken, carrots, celery, onion, garlic, tomatoes, beans, and broth to the crockpot.
2. Stir in thyme, salt, and pepper.
3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is cooked through and veggies are tender.
4. Remove chicken, shred with two forks, and return to the pot.
5. If adding pasta or rice, stir it in during the last 30–45 minutes of cooking.
6. Taste and adjust seasoning if needed.
7. Ladle into bowls and garnish with fresh parsley.
Notes
Make it vegetarian by skipping the chicken and using extra beans or lentils.
Add spinach or kale during the last 15 minutes for extra greens.
Freezes well—store in airtight containers for up to 3 months.
