Description

This easy, hands-off Crockpot Meatloaf recipe delivers a tender, moist, and flavorful homemade meal without the evening fuss, making it perfect for busy weeknights. The slow cooker method frees up oven space and infuses the meatloaf with deep, rich flavors, quickly becoming a family staple.

Ingredients

Scale

1.5 lbs Ground Beef (80/20)
1 Large Egg
1/2 cup Milk
1/2 cup Plain Breadcrumbs
1/2 cup Finely Chopped Onio
1/2 cup Ketchup (divided)
1 tbsp Dijon Mustard
1 tsp Worcestershire Sauce
1 tsp Garlic Powder
1 tsp Salt
1/2 tsp Black Pepper
2 tbsp Brown Sugar

Instructions

  1. In a large bowl, gently combine the ground beef, egg, milk, breadcrumbs, chopped onion, 1/4 cup ketchup, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Do not overmix; this keeps the meatloaf tender
  2. Shape the mixture into an oval loaf that should fit comfortably in your slow cooker
  3. Place the shaped meatloaf directly into your slow cooker
  4. In a small bowl, whisk together the remaining 1/4 cup ketchup and brown sugar for the glaze. Pour this mixture evenly over the top of the meatloaf
  5. Cover your crockpot and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The internal temperature should reach 160ยฐF (71ยฐC)
  6. Allow the meatloaf to rest for 10-15 minutes before slicing and serving. This resting period helps the juices redistribute

Notes

Avoid overmixing the meat; gentle handling keeps it moist.

Consider lining your slow cooker with parchment paper for easier cleanup. This also helps you lift the finished meatloaf out easily.

If your slow cooker runs hot, you might place a trivet under the meatloaf to prevent the bottom from overcooking.

Always check the internal temperature with a meat thermometer to ensure safety and perfect doneness.

Store any leftover meatloaf in an airtight container in the refrigerator for up to 3-4 days.

For longer storage, freeze individual slices or the whole loaf in freezer-safe containers or bags for up to 3 months.

To reheat, thaw frozen meatloaf in the refrigerator overnight. Then, gently warm slices in the microwave, oven, or a skillet until heated through. A little extra sauce or gravy helps maintain moisture during reheating.
