5 lbs Russet or Yukon Gold Potatoes
1 cup Chicken or Vegetable Broth
1/2 cup unsalted Butter
4 oz full fat Cream Cheese
1/2 cup Sour Cream
1/2 cup whole or 2% Milk
1 tsp Garlic Powder
1 tsp Salt
1/2 tsp Black Pepper
Fresh Chives or Parsley
Instructions
- Peel and chop your potatoes into even 1-inch cubes. Rinse them well
- Place the chopped potatoes in your 6-quart or larger Crockpot
- Pour in the chicken or vegetable broth. Add the cubed butter, garlic powder, salt, and pepper
- Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the potatoes are very tender when pierced with a fork
- Once cooked, carefully drain any excess liquid from the Crockpot
- Add the softened cream cheese, sour cream, and milk to the potatoes in the Crockpot
- Using a potato masher or an electric hand mixer, mash the potatoes until smooth and creamy
- Taste and adjust seasonings as needed. If you desire a thinner consistency for your Crockpot mashed potatoes, add a little more milk, one tablespoon at a time
- Keep warm in the Crockpot on the WARM setting until ready to serve
