- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups diced potatoes (Yukon Gold or Russet)
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese
- 2 tbsp cornstarch mixed with 2 tbsp cold water (optional, for thickening)
Instructions
- 1. In a skillet over medium heat, cook ground beef with diced onion and garlic until browned. Drain excess fat.
- 2. Transfer cooked beef mixture to the crockpot.
- 3. Add diced potatoes, carrots, celery, beef broth, salt, pepper, thyme, and paprika.
- 4. Cover and cook on low for 7โ8 hours or high for 3โ4 hours, until vegetables are tender.
- 5. Stir in heavy cream and shredded cheddar cheese. Let melt and combine.
- 6. If a thicker consistency is desired, stir in the cornstarch slurry and cook on high for an additional 15โ20 minutes until thickened.
- 7. Taste and adjust seasoning as needed. Serve hot.

- Great served with crusty bread or crackers.
- Use ground turkey or sausage as an alternative to beef.
- Leftovers store well in the fridge for up to 4 days or freeze for up to 2 months.
