2 large Carrots
2 large Celery stalks
1 medium Yellow onio
3 cloves Garlic
46 oz Dried egg noodles
1 tsp Dried thyme
1 tsp Dried oregano
1 Bay leaf
1 tsp Salt
0.5 tsp Black pepper
0.25 cup Fresh parsley


Instructions

  1. Place chicken breasts, carrots, celery, onion, garlic, thyme, oregano, bay leaf, salt, and pepper into your crockpot
  2. Pour chicken broth over all ingredients
  3. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The chicken should be very tender
  4. Remove the chicken from the crockpot. Shred it using two forks. Discard the bay leaf
  5. Return shredded chicken to the crockpot
  6. Add the dried egg noodles to the soup. Cook on HIGH for an additional 15-20 minutes, or until noodles are tender
  7. Stir in fresh parsley. Taste and adjust seasonings as needed for your perfect Crockpot chicken noodle soup

Notes

Do not add noodles at the beginning. They become mushy. Instead, add them during the last 20 minutes of cooking. This ensures perfect al dente noodles.
