Ingredients

Scale

2 lbs Boneless, skinless chicken breasts
4 cups Chicken broth (low sodium)
2 (10.5 oz) cans Cream of chicken soup
1 medium Onion, chopped
2 stalks Celery, chopped
1 cup Carrots, chopped
1 tsp Dried parsley
1 tsp Garlic powder
½ tsp Salt
¼ tsp Black pepper
1 (16.3 oz) can Refrigerated biscuit dough (flaky layers)

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker
  2. Add the chopped onion, celery, and carrots
  3. Pour in the chicken broth and cream of chicken soup
  4. Sprinkle with dried parsley, garlic powder, salt, and pepper
  5. Stir everything gently to combine
  6. Cover the Crockpot and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is cooked through
  7. Carefully remove the chicken, shred it with two forks, then return it to the Crockpot
  8. Open the biscuit can, flatten each biscuit slightly, and cut into quarters
  9. Drop the biscuit pieces over the hot Crockpot chicken and dumplings mixture
  10. Cover and cook on high for an additional 20-30 minutes, or until the dumplings are puffed and cooked through
  11. Stir gently before serving
  12. Enjoy your delicious Crockpot chicken and dumplings!

Notes

Always use low-sodium broth; you can adjust salt later.

Don’t overcook the chicken initially, or it will become dry.

Shredding the chicken before adding the dumplings ensures even distribution.

For the dumplings, resist the urge to peek too often; consistent heat helps them cook properly.

If your Crockpot chicken and dumplings seems too thin, mix a tablespoon of cornstarch with a little cold water and stir it in during the last 30 minutes of cooking.
