This Crockpot Breakfast Casserole offers pure convenience, cooking itself overnight or during the day while you sleep or go about your busy schedule.
Ingredients
30 oz bag Frozen Hash Browns
12 large Eggs
1 cup Milk
1 lb Cooked Sausage/Bacon (crumbled)
2 cups Shredded Cheese (Cheddar/Monterey Jack)
1/2 cup Onion (diced)
1/2 cup Bell Pepper (diced)
1 tsp Salt
1/2 tsp Black Pepper
Instructions
- Lightly grease the inside of your slow cooker with cooking spray to prevent sticking
- Spread the frozen hash browns evenly on the bottom of the slow cooker
- Sprinkle the cooked sausage or bacon over the hash browns
- Distribute the diced onion, bell pepper, and one cup of shredded cheese over the meat layer
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined
- Carefully pour the egg mixture over the layers in the slow cooker
- Sprinkle the remaining one cup of shredded cheese over the top of the egg mixture to form a beautiful golden crust
- Cover your crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. The center should be set
- Once cooked, unplug and let it sit for 10-15 minutes before serving to allow the Crockpot Breakfast Casserole to firm up nicely
