Ingredients
32 oz Frozen tater tots
8 Large eggs
1/2 cup Milk
1 lb Cooked breakfast sausage, crumbled
2 cups Shredded cheddar cheese
1/2 Onion, finely chopped (optional)
1/2 tsp Salt
1/4 tsp Black pepper
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9×13 inch baking dish
- Spread the frozen tater tots in a single layer at the bottom of the prepared dish
- If using, brown your sausage (or bacon) in a skillet and drain any excess grease
- Sprinkle the cooked sausage (and chopped onion, if using) evenly over the tater tots
- Whisk together the eggs, milk, salt, and pepper in a large bowl. Pour this egg mixture over the tater tots and sausage
- Top everything with the shredded cheddar cheese, ensuring even coverage
- Bake for 40-50 minutes, or until the eggs are set, the cheese is bubbly and golden, and the tater tots are wonderfully crispy
- Remove the casserole from the oven and let it stand for 5-10 minutes before serving
Notes
Do not thaw tater tots; bake them frozen for maximum crispiness.
Pre-cook breakfast meat thoroughly and drain grease well to avoid a soggy casserole.
Do not overmix the eggs; whisk just until combined.
For extra crispy tops, broil for the last 2-3 minutes, watching carefully to prevent burning.
