32 oz Frozen tater tots
8 Large eggs
1/2 cup Milk
1 lb Cooked breakfast sausage, crumbled
2 cups Shredded cheddar cheese
1/2 Onion, finely chopped (optional)
1/2 tsp Salt
1/4 tsp Black pepper


Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9×13 inch baking dish
  2. Spread the frozen tater tots in a single layer at the bottom of the prepared dish
  3. If using, brown your sausage (or bacon) in a skillet and drain any excess grease
  4. Sprinkle the cooked sausage (and chopped onion, if using) evenly over the tater tots
  5. Whisk together the eggs, milk, salt, and pepper in a large bowl. Pour this egg mixture over the tater tots and sausage
  6. Top everything with the shredded cheddar cheese, ensuring even coverage
  7. Bake for 40-50 minutes, or until the eggs are set, the cheese is bubbly and golden, and the tater tots are wonderfully crispy
  8. Remove the casserole from the oven and let it stand for 5-10 minutes before serving

Notes

Do not thaw tater tots; bake them frozen for maximum crispiness.

Pre-cook breakfast meat thoroughly and drain grease well to avoid a soggy casserole.

Do not overmix the eggs; whisk just until combined.
