- 2 cups mashed potatoes (cold works best)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs or panko
- Oil for frying
- Fresh parsley for garnish (optional)
Instructions
- 1. Add mashed potatoes to a bowl and mix with mozzarella, cheddar, garlic powder, paprika, salt, and pepper.
- 2. Scoop about 1 tablespoon of mixture and roll into balls.
- 3. Set up a dredging station with flour, beaten eggs, and breadcrumbs.
- 4. Roll each potato ball in flour, dip in egg, then coat in breadcrumbs.
- 5. Heat oil in a deep skillet or pot to 350ยฐF (175ยฐC).
- 6. Fry potato cheese bombs in batches for 2โ3 minutes until golden and crispy.
- 7. Remove and drain on paper towels.
- 8. Garnish with parsley and serve hot.
Notes
- Freeze the potato balls for 15 minutes before frying to prevent cheese leakage.
- Serve with ranch, marinara, or spicy aioli for dipping.
