Description
A rich and hearty Creamy Parmesan Italian Sausage Soup made with savory sausage, tender vegetables, and a velvety broth infused with garlic, herbs, and melted Parmesan. Comfort food at its finest.
Ingredients
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil (if needed)
1 small onion, chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes (optional)
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups chopped spinach or kale
Salt and black pepper to taste
Instructions
1. In a large pot or Dutch oven over medium heat, cook the Italian sausage until browned. Remove excess grease if needed.
2. Add onion, garlic, carrots, and celery. Sautรฉ for 5โ7 minutes until vegetables are softened.
3. Stir in chicken broth, oregano, basil, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 15 minutes.
4. Stir in heavy cream and Parmesan cheese. Simmer another 5 minutes, stirring occasionally.
5. Add spinach or kale and cook until wilted, 2โ3 minutes. Season with salt and pepper to taste.
6. Serve hot with crusty bread or a side salad.
Notes
For a lighter version, use half-and-half or whole milk.
Add small pasta or diced potatoes for extra heartiness.
Leftovers can be stored in the fridge for 3โ4 days and reheated gently.
