A rich and comforting Creamy Parmesan Italian Sausage Soup recipe, tender vegetables, and a cheesy brothโperfect for chilly nights and easy weeknight dinners.
Ingredients
1 lb Italian sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
2 cups diced potatoes
2 carrots, chopped
2 celery stalks, chopped
4 cups chicken broth
1 tsp dried Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
Salt and pepper to taste
2 cups chopped fresh spinach or kale
1 cup heavy cream
3/4 cup grated Parmesan cheese
1 tbsp olive oil
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up as it cooks. Remove excess grease if needed.
2. Add onion and garlic, and sautรฉ for 2โ3 minutes until fragrant.
3. Stir in potatoes, carrots, and celery. Pour in chicken broth and add Italian seasoning, red pepper flakes, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 15โ20 minutes until vegetables are tender.
5. Stir in spinach or kale and cook for another 2โ3 minutes until wilted.
6. Reduce heat to low and add heavy cream and Parmesan cheese. Stir until smooth and heated through.
7. Taste and adjust seasoning if needed. Serve hot with crusty bread.
Notes
Use half-and-half instead of cream for a lighter version.
For extra richness, add a splash of white wine before simmering.
Leftovers store well in the fridge for up to 4 days or freeze up to 2 months.
