A hearty, creamy cowboy soup loaded with ground beef, potatoes, veggies, and Southwest flavors comforting, rich, and perfect for cold nights.

- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes with green chiles
- 1 can (15 oz) corn, drained
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (10 oz) cream of chicken soup
- 1 1/2 cups beef broth
- 1 cup heavy cream
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- 1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease.
- 2. Add onion and garlic and sautรฉ until softened.
- 3. Stir in potatoes, diced tomatoes with chiles, corn, and pinto beans.
- 4. Add cream of chicken soup, beef broth, smoked paprika, chili powder, cumin, salt, and pepper. Mix well.
- 5. Bring to a simmer, cover, and cook for 15โ20 minutes until potatoes are tender.
- 6. Reduce heat to low and stir in heavy cream. Simmer for 5 more minutes without boiling.
- 7. Taste and adjust seasoning as needed.
- 8. Garnish with parsley or green onions and serve warm.
Notes
- For extra heat, add a diced jalapeรฑo or use hot Rotel.
- This soup thickens as it cools add a splash of broth when reheating if needed.
