Description

A hearty, creamy cowboy soup loaded with ground beef, potatoes, veggies, and Southwest flavors comforting, rich, and perfect for cold nights.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (10 oz) cream of chicken soup
  • 1 1/2 cups beef broth
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  • 1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease.
  • 2. Add onion and garlic and sautรฉ until softened.
  • 3. Stir in potatoes, diced tomatoes with chiles, corn, and pinto beans.
  • 4. Add cream of chicken soup, beef broth, smoked paprika, chili powder, cumin, salt, and pepper. Mix well.
  • 5. Bring to a simmer, cover, and cook for 15โ€“20 minutes until potatoes are tender.
  • 6. Reduce heat to low and stir in heavy cream. Simmer for 5 more minutes without boiling.
  • 7. Taste and adjust seasoning as needed.
  • 8. Garnish with parsley or green onions and serve warm.

Notes

  • For extra heat, add a diced jalapeรฑo or use hot Rotel.
  • This soup thickens as it cools add a splash of broth when reheating if needed.
